和牛の個性をしっかりと感じてもらえるよう個体、部位、熟成期間、塩分濃度、水分活性など全てにこだわり和牛のプロの「牧場×職人×料理人」が協力して作り上げた芸術品。
イタリアのタマニーニ社製のスライサーで1mmの厚さにカットします。
Secret of our deliciousness ⑤ Supreme Wagyu beef ham [Cesina Suprema]
Original Wagyu raw ham made exclusively for our store by Hokkaido’s best raw ham craftsman [Cecina Suprema] using Hokkaido’s legendary Japanese black beef koburo.
This work of art was created through the cooperation of Wagyu professional ranchers, craftsmen, and chefs, paying special attention to each individual, part, aging period, salinity, water activity, and other details so that you can fully experience the individuality of Wagyu beef.
Cut into 1mm thick slices using a slicer manufactured by Tamanini in Italy.
